Production area: Municipality of Ziano Piacentino in the Colli Piacentini DOC

Grapes: aromatic Malvasia di Candia 100%

Yield in the Vineyard:90 quintals/ha

Vinification: The grapes are harvested exclusively by hand with consequent selection of the best bunches. The must from the pressing is immediately pressed and fermented and special barrels with temperature control to improve the final aromas and bouquets. It is filtered so as to maintain the characteristic tastes and hence the aromatic grape variety and the desired sugar content.

Curiosity

Malvasia Aromatica di Candia is a vine with ancient origins, whose presence in Emilia-Romagna has been attested for centuries. It owes its name to the Greek port of Monemvasia, from which fine wines produced in Crete left for the Serenissima. These were grapes characterized by the technique of drying the bunches in the sun. When in the mid 1500s the Conquest of Crete by the Turks endangered the flourishing wine trade. Managed by the Venetians, they favoured the introduction of the vines that made up this wine, on the main routes that were headed to the Republic. ????At the same time Malvagia, Malvasia was called any wine produced with the drying technique and for this reason there are at least 17 varieties of malvasia today ! Completely different from each other in Emilia.
